Food & Beverage Director – Luxury Hotel

About the role

The Food & Beverage Director will lead all F&B operations at Hotel Palace Portoroz, ensuring high‑quality service and profitability across restaurants, bars and banqueting areas. You will be responsible for strategic planning, daily management and close collaboration with front office and sales teams.

Key responsibilities

• Plan, schedule and organise staff working hours to match occupancy levels.
• Train, supervise and provide performance feedback to the F&B team.
• Coordinate with front office and sales to allocate bookings affecting the F&B area.
• Oversee inventory and material control, ensuring cost‑effective procurement.
• Manage day‑to‑day operations, maintaining brand standards and service quality.

Required profile

• EU citizenship or valid long‑term EU residence permitting full employment.
• Minimum 5 years of leadership experience in F&B management within a 5‑star hotel.
• Strong operational knowledge of restaurants, bars, banqueting and cost control.
• Proven ability to lead multicultural teams and excellent English communication; Slovenian or another regional language is a plus.
• Strategic mindset with a hands‑on operational approach and flexibility for seasonal peaks.
