Chef de Partie – Baker

About the role

We are seeking a skilled Chef de Partie – Baker to lead the bakery operations aboard our cruise ship, ensuring high‑quality bread production and strict compliance with health regulations.

Key responsibilities

• Oversee daily bakery shop operations and production in line with company policies.
• Coach, supervise and evaluate bakery staff together with the Head Baker.
• Manage production, quality and presentation of the bread assortment for daily menus.
• Prepare production forecasts, record leftovers and control food costs.
• Set up and maintain bread displays across all buffets.
• Ensure compliance with United States Public Health (USPH) rules and prepare for inspections.
• Maintain bakery cleanliness, equipment care and pantry readiness for USPH audits.
• Handle requisition and transport of supplies from main stores to the bakery.
• Track daily consumption, production recap and ensure accurate recipe yields.
• Monitor staff punctuality, uniform standards and hygiene in public areas.

Required profile

• Minimum two years experience as a Chef de Partie – Baker in an upscale hotel, resort, cruise ship or convention banqueting service.
• Culinary school degree.
• Strong management abilities in a multicultural, dynamic environment.
• Excellent communication, problem‑solving and decision‑making skills.
• Proven customer service, team‑building and conflict‑resolution capabilities.
